Here's a great low fat blueberry recipe for you (it's better than blueberry pie) : Low Fat Blueberry Tarts Serves 12Ingredients 1 egg, slightly beaten 1/2 cup corn syrup 1 teaspoon fresh lemon juice 3/4 teaspoon vanilla 1/3 cup brown sugar 1 tablespoon flour 3 tablespoons melted butter 1 1/2 cups blueberries Pastry dough (or pre-made tart shells) Directions Preheat oven to 375. Roll out pastry dough and cut to fit tart tins (you can use muffin tins but remember to increase the cooking time a bit). In a large bowl, whisk egg, syrup, lemon juice and vanilla. In a medium bowl, combine sugar and flour. Add sugar mixture to egg mixture. Blend in butter. Spoon blueberries into uncooked pastry shells. Pour the egg mixture over blueberries. Bake 18-23 minutes or until golden on top. Remove tarts from tins immediatly. The tarts will firm up as they cool.
